Arroz Chaufa de Pollo

Chicken Chaufa Rice

Locote-style chicken fried rice!
Yields: 4-6 servings
Time: 20 minutes
Difficulty: Easy
Ingredients:
* 2 cups of cooked rice (preferably from the day before)
* 2 boneless, skinless chicken breasts, cubed
* 1/2 cup frozen peas
* 1/2 cup diced carrots
* 1/4 cup chopped spring onion
* 2 tablespoons of vegetable oil
* 2 eggs
* 2 tablespoons of soy sauce
* 1 tablespoon of oyster sauce (optional)
* 1 teaspoon of ground yellow chili (optional)
* Salt and pepper to taste
* Chopped cilantro for garnish
Instructions:
* In a wok or large skillet, heat the oil over medium-high heat. Add the chicken and cook until browned and cooked through.
* Add the peas and carrots, cook for 2 more minutes.
* Make a space in the center of the wok and add the eggs. Stir briskly until scrambled.
* Add the cooked rice, soy sauce, oyster sauce (if using), and yellow chili (if using). Mix well and cook for 3-5 minutes, or until the rice is heated through and the flavors are combined.
* Add the spring onion and cook for 1 more minute.
* Season with salt and pepper to taste.
* Serve hot, garnished with chopped cilantro.
Locote Tip! For an extra touch of Peruvian flavor, add a teaspoon of yellow chili paste when cooking the chicken.
